does most mixed martial arts schools set you up with amature fights like once you have trained for a period of time?

Nope.
If it’s not a reputable school, they probably won’t know where to set you up for amateur fights, so make sure you go to a good school.
You will be entered into a amateur fight once you are 18 years old and your coach feels you are ready. There is no time period it is based strictly on skill.

Also, if you don’t WANT to be entered into a fight, you don’t have to be. You can just train for self defence/health reasons.
