An Interm champion is someone they put in place when the Champ is unable to defend his belt.

In this case, Randy Couture was tied up legal battles (mulling retirement in an effort to go to another promotion for a big pay day against Fedor).

Since there was no foreseeable end to when and if Randy would come back to the UFC, they created an “Interim” title. A place holder title.

This isn’t the first time it has happened in the UFC, it is a good ploy so that the title isn’t entirely held up if a guy is seriously injured or going through contract disputes or what have you. It gives other fighters the chance to fight for the title.

The interim champ is basically a “place-holder” champion. When Randy Couture left the UFC late last year, he still had fights on his contract, as well as the Heavyweight Title. So the UFC, realizing how marketable he was, and convinced that they could win a court battle, didn’t strip him of his title, but instead had a bout for an “Interim Championship” between the former UFC HW champ Tim Sylvia and former Pride HW champ Antonio Rodrigo Nogueira.
