so i was recently at the UFC 115 weigh-ins and couple of fighters had to undress to make the cut for their weight class, however, why doesnt UFC just use digital weighing machines instead of the manual one?

Digital scales can be tampered with very easily.
its more reliable in the end if anything happens
Same reason as doctors and boxing. Accuracy.
